Ice cream remains a beloved summertime snack, / except for one big flaw — / it melts.

Thanks to scientific advancements, / however, / this may not be an issue for long.

While several slow-melting ice cream varieties / already exist, / Japanese researchers have developed / a unique type of ice cream / that seemingly doesn't melt at all.

Interestingly, / this discovery was accidental / and was revealed / after they experimented / with a liquid extracted from strawberries, / called polyphenol, / to make desserts.

The researchers observed that / when polyphenol was added to the dessert's cream, / the cream instantly solidified / because polyphenol inhibits water and oil from separating, / allowing it to stay firm / and maintain its shape.

Realizing this effect would likely extend to additional substances, / the researchers began incorporating it / into ice cream products / to prevent melting.

In order to test their claims, / a reporter purchased / some of the ice cream / and left it outside in 28°C weather.

Five minutes later, / it appeared resistant to heat, / staying cold to the touch / and showing no signs of melting.

There are even reports / detailing instances of the ice cream / lasting for over three hours / without melting.
